I will admit, it was the title that caught my eye whilst ear marking practically every page of the Gwyneth Paltrow cookbook 'it's all good'. Fickle I know, but it's so damn tasty and easy to whip up, leaving you plenty of time to be getting your goddess on!
Here's what you will need:
2/3 cup of goat milk yoghurt or Vegenaise *I can't seem to find Vegenaise here in the UK so I replaced it with 1/3 cup solesse and 1/3 cup creme fraiche that needed to be used up
1/4 cup coriander
2 spring onions
Juice of a small lime
1/2 green jalapeño chopped
1/2 cup extra virgin olive oil
1/2 teaspoon sea salt
1 tablespoon raw honey
Pop all the ingredients in a blender and whizz until smooth ( it makes quite a lot, but will keep for about a week in the fridge!)
What you end up with is a delicious (if a little sweet) dressing that jazzes up even the simplest of salads.
