I happened to stumble across this little gem whilst looking for ways to use up ingredients from my baking cupboard; mainly the massive bag of spelt flour- I hate throwing things away so when we moved out nearly all my baking ingredients came with me. So if you like banana bread but you don't like the calories then this is the recipe for you!
I made a loaf instead of muffins but other then that I followed the recipe to a tee and I wouldn't change a thing-it was perfectly moist and utterly scrumptious!
To get your bake on you will need:
~ a loaf tin lined with grease proof paper
~ 2 cups of spelt flour
~ 1/2 cup of brown sugar
~ 1/2 cup ground flaxseed
~ 1 tsp cinnamon
~ 1tsp baking powder
~ 1 tsp bicarbonate of soda
~ 1/2 tsp sea salt
~ 3 ripe bananas mashed
~ 3/4 cup milk (I used semi skim)
~ 1/2 cup Greek yoghurt
In separate bowls mix together the wet and dry ingredients before folding the wet into the dry mixture.
Once all is combined pour the mix into your loaf tin and sprinkle the top with a handful of oats. Pop into a preheated oven of 160 degrees and bake for 35 mins (remember a skewer should come out clean when baked through.)
Once done, try and let cool before serving with an ice cold glass of milk.
