Jeepeers creepers there is nothing more soul destroying than trying to find a home in WA! I thought that would be the best bit about relocating- how bloody wrong I was! Astronomicale rent prices aside, I'm spending my days travelling up and down the city, queuing (yes queuing to view properties!) filling in applications so detailed they practically want to know what you ate for breakfast only to get a SMS letting us know we were unsuccessful… Note to Lady Luck: please show your pretty face soon.
To counteract the stress of above I needed to whip up some delicious treats as no amount of chocolate was sorting out my bad mood; enter peanut butter, chocolate & avocado bites.
We all know how much I love peanut butter, heck I've even posted how to make your own peanut butter which in turn led to the skinny peanut butter fudge brownies and I love sneaking avocado into everything so making these bites were a match made in heaven!
You don't need butter, or sugar, or flour and I want to say they are healthy but I will be kinda lying considering they are made with quite a lot of peanut butter….and I threw in a lot more chocolate chunks than the recipe called for which you can find here. But they are gluten free as long as you use gf rolled oats!
You're going to need:
An avocado, mashed
2/3 cup peanut butter
3 tbsp honey
3/4 cup oats
1/2 tsp baking powder
Either 1/2 cup choc chips or like I did and chopped up a 100g bar of dark chocolate into decent sized chunks!
Pop the oven on to around 200 degrees and line a baking sheet with baking paper
In a large bowl, mix all the WET ingredients until fully combined
Stir in the dry ingredients until well mixed
Add the chocolate, give it a quick stir
Depending on how big you want your 'bites' to be scoop out the mixture and place onto the baking sheet- I made about 12 but you can make around 18 if you like them smaller.
Pop in the oven for about 15 mins and wait patiently (just like Ralph!)
