Our first Valentine's day as a trio and I just couldn't resist the above photo! Sorry Ralph but I did ruin a Dior lipstick in the process so you could say Karma got me back….Valentine smooches aside I also can't resist banana bread or Nutella. Put them together and you got me a match made in heaven, plus it's totally acceptable to eat Nutella banana bread for breakfast too. This recipe is a win win all round.
If you have a spare 15 minutes I suggest you do the same. I found the recipe courtesy of Zoe bakes which you can find here. I halved the ingredients as I only wanted to bake one loaf and added a bit more Nutella into the mix because I'm a Nutella freak and you can never have enough Nutella. Not ever.
All you need is:
2 ripe bananas, mashed
1/2 cup brown sugar
1/4 cup in salted butter, melted
1/4 cup milk
1 large egg
1 tsp vanilla extract
1 1/2 cup plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
1 tsp salt
1/3 cup Nutella
Preheat the oven to 180 degrees and grease and line a loaf tin.
In a large mixing bowl mix together (with a whisk or paddle attachment) all the wet ingredients (butter, milk, egg & vanilla) and the sugar. Stir all the dry ingredients together in a seperate bowl and then add to the wet/ sugary mixture mixing until smooth. Next stir in the mashed banana.
If you live anywhere other than super hot Perth you will need to melt the Nutella before folding 2/3 of your mixture into your batter.(about 15 seconds in a microwave should do it.) If you want a swirly finish be careful not to over mix. I was racing against the clock and making this during Ralph's nap time so didn't carefully fold, more like mix real fast!
Pour your mixture into the prepared tin, again being careful as you do so if you want a swirly effect. Swirl the remaining Nutella into the top of the batter and bake for 45 minutes.
Leave to cool (if you can) for 10 minutes on a cooling rack before devouring.
